Veggie ramen
It’s freezing in Maine and the idea of eating a hot bowl of ramen for lunch sounds very comforting. This one is a realllllly quick version.
I’m kind of obsessed with this vegan “seasoning” I picked up from my favorite store on earth, Sun Market. (Don’t worry, it’s available online.) It’s savory and umami-packed but still very delicate, which is perfect for having to function post-lunch. I’ll sprinkle this into a pot of water and add some daikon, plus a gochujang-miso slurry. That adds spice and extra flavor extremely quickly. I’ll destem some hearty greens, like kale or swiss chard, and wilt them into the broth, while boiling noodles (Sun Ramen forever and always amen) and an 8-minute egg. Sprinkle on some scallions and sesame seeds and that’s lunch, babe.
